欢迎来重庆。重庆最负胜名的就要数火锅，据说吃火锅起因于潮冷的冬季气候和重庆人爽快率直的性格。从今天街头鳞次栉比的火锅店可以看出火锅市场的兴旺。重庆火锅主要分为红汤和清汤两种，红汤以麻辣鲜香为主，而清汤以色清味鲜为特色。鸳鸯火锅就是这二者的结合体，即火锅用s形的金属片分格成太极图状．一清一红．颜色分明。外地人在重庆喜欢吃鸳鸯火锅，这样要是吃红汤抵挡不了，可以马上请清汤救驾。
本地人的最爱大概要算街边的小火锅(又称麻辣烫)了，现在由于整治市容，已经很少见到街边的火锅大排档了。不过只要不出重庆，你绝对可以吃到正宗的山城火锅。鸳鸯火锅是专为我这?quot;叶公好辣"的人准备 的，一边在自己这边沾着清汤．一边在瞟着重庆那无以伦比的美眉们。
漫步重庆街头，各种饭馆门前大都打有"火锅"招牌。客人进得店里，起火架锅．花椒．辣椒诸般刺激性极强的调料，大把地往锅里撒，等得锅开，但见红汤翻滚，麻辣味扑鼻。夹起毛肚。鸭肠等放入锅里涮，吃起来可没有北京的涮羊肉那般悠闲，要有"不怕辣"的气概。每涮一块毛肚或鸭肠之类，往嘴里搁前都要下好大决心，重庆人吃火锅，认为最好是三伏天。以毒攻毒，以热攻热．在烈日炎炎之下，一炉熊熊．一锅沸碍腾，一手执筷，一手摇扇，边烫煮，边嚼吃，"挥汗吃毛肚，汗出当风凉。
